Healthy Broccoli Salad

This broccoli salad is one I bring to every summer gathering. It's crunchy, satisfying, and packed with fiber, antioxidants, and healthy fats. Swapping the traditional mayo-heavy dressing for Greek yogurt keeps it lighter and adds a protein boost. The raisins and walnuts add natural sweetness and omega-3s — this one is as functional as it is delicious. Stores well in the fridge for 3–4 days.


INGREDIENTS:

  • 3 small heads of broccoli, cut into bite-sized florets

  • 1 medium red onion, chopped

  • ½ cup walnuts

  • ½ cup raisins

  • ½ cup bacon, crumbled

  • ¾ cup plain Greek yogurt

  • 3 TBSP raw sugar (or coconut sugar)

  • 1½ tsp white wine vinegar

  • ½ cup shredded cheddar cheese

DIRECTIONS:

  1. In a small bowl, combine Greek yogurt, sugar, and vinegar. Set aside.

  2. In a larger bowl, add broccoli, onion, nuts, raisins, and bacon.

  3. Drizzle dressing over the salad and toss until evenly coated. Enjoy!
